Recipe of the Week - Banana Oat Bars
 
Ingredients
  • 1 1/3 cups quick cooking oats
  • 1/2 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 cup raisins
  • 1 cup mashed bananas
  • 1/4 cup skim milk
  • 2 egg whites
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
  3. Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.
